Unlike blossom honey, forest honey is not made from nectar, but from the honeydew that the busy bee colonies collect from the needles and leaves of the trees. This strong flavoured honey has a slightly bitter, resinous aroma.

Extracted from organic bee keepers, As a result, it does not crystallise as quickly as other types of honey and remains liquid longer.
